Don't even need to edge it. It freezes because the inside is reaching the freezing point and ice expands. Pressure can prevent the process of freezing, so when you open the cap it releases the pressure and it will turn to ice.

Same effect happens with metal pipes during winter that aren't well insulated. Depending how strong the pipes are it could be -10f and still have liquid water inside the pipe. It's when it becomes too cold the water will freeze, expand, and burst the pipe.

It's also why it's not good to stick aluminum pop cans in your freezer because they'll burst. Plastic bottles at least have some more give to them and won't usually burst when they freeze.

You could have smacked it before pulling it out of the freezer and it would instantly go to slush. Works with water to. The process basically happens because the ice crystals have no nucleation points so they can't form and grow. By suddenly shaking it air gets trapped in it and gives it a nucleation point and since it should have frozen already the ice crystals grow in seconds.
