I understood most of this but, how long do you roast the aubergines for? And what are the amounts please? Also, what is that creamy blob made of that's placed on top before the cheese? Am I just missing the ingredients list somewhere?
Great tip to replace pasta with beans. You can also get pea and a lentil pasta now, both excellent substitutes.

I made a vegetable and bean sauce similar to this and served it with a side of penne pasta.
It's a bit like adding a can of lentils to your bolonese sauce

Where can i find the complete recipe for this? @Jill Sharpe, I agree a mention and explanation as to why leaving the garlic out after chopped is helpful, as I recall hearing this once, but dont recall the benefits for doing this...as well as I heard you should rub spices, such as basil ect.. between the palms of your hand prior to chopping but dont recall the purpose and benefits.

I really love this idea. I absolutely can not have ANYTHING with a gluten-like molecule in it. I don’t have celiac, instead, my immune system attacks my muscles. I will get excruciating back, neck and thus head pain. This also includes corn syrup which actually contain a high level of gluten-like fragments that trigger the immune system response from corn Zein. I have really missed pasta and this looks delicious!

Love the recipe, but please don't use plastic cutting board, you might introduce microplastic into your cooking and food. Change it into a wooden cutting board. Otherwise, love the recipe :)

Why cooking beans instead of pasta? Aren't beans for protein? I'm getting confused. Even if you swap them, would the beans not have enough carbs to provide you with sufficient energy?

Flavour is something that develops with time, pushing these “Quick cook” recipes doesn’t allow you to get the best from food. Eg: Zoe tells us to allow garlic to stand for 20 mins when chopped to develop beneficial chemicals..
might be worth saying this in the dialogue.
