Birthday Rainbow Surprise Cake With Number Inside
 
Ingredients: 
 
4 packages of pound cake mix 
12 eggs 
4 cups of water 
1 1/3 cups of oil 
Neon food coloring 
20 oz of white fondant 
12 oz of royal icing (recipe is in our videos) 
Non-stick oil spray 
 
Instructions: 
 
1. Preheat oven to 325ºF. 
2. Spray a 13x4x4.5-inch loaf pan with non-stick oil well. 
3. Make cake batter using two packages of cake mixes, according to the package instructions. 
4. Divide the batter in 5 bowls. Color the batter in each bowl in different color. 
5. Pour the batter into disposable pastry bags. 
6. Drizzle colored cake batter, alternating colors into the pan until you use all the batter. 
7. Tap the pan on the counter a few times to remove air bubbles. 
8. Bake for 50 to 60 minutes until a toothpick inserted in the center of the cake comes out clean. 
9. Remove and set the cake on cooling rack and cool completely. 
10. Cut the cake into 1-inch thick slices. Lay slices flat on a baking tray and place in the freezer for at least one hour. 
11. Cut the numbers out of cake slices. Place the number pieces back in the freezer for 30 minutes. 
12. Clean and prepare the loaf pan as before. 
13. Make the remaining two cake mixes according to the package instructions. 
14. Pour a thin layer of cake mix into the loaf pan. 
15. Pour remaining batter into a pastry bag. 
16. Line the numbers in a single row down the center of the pan, piping batter into the pan as needed to keep the numbers straight. 
17. Pipe the remaining batter into the pan and on top of the numbers. Mark which direction the numbers are facing and keep track of this while decorating, so you know which end of the cake to slice into and have forward-facing numbers. 
18. Smooth the batter. 
19. Bake for 50 to 60 minutes, rotating pan 180 degrees after 30 minutes, until a skewer comes out clean. 
20. Take the cake out of the pan. Cool it completely. 
21. Knead the fondant well until it becomes smooth. Roll out to 24x15-inches. 
22. Brush a thin layer of jam on the cake sides. 
23. Cover cake with fondant and smooth the sides with a smoother. 
24. Divide the icing into bowls. Color each in different neon color you like. 
25. Use spoons to pour the icing on top of the cake.  
26. Let the cake dry for 10 to 15 minutes. 
27. The cake is ready to serve.
