Thank you! I followed your method, and I've seen milk curd and whey separation going on for almost two weeks now. However, I injected the clear whey with one small bottle of Yakult (a sweetened probiotic milk beverage fermented with the bacteria strain Lactobacillus paracasei Shirota) and let it sit for another two weeks. Now I have a double-shot concoction of lactic acid bacteria to be stabilized in molasses! :)

Hi there. From all my reading, there is always another step at the beginning. The washed rice water sits in the dark for several days to attract bacteria from the air and create a bacteria-rich liquid. It is this liquid that gets added to the milk so that the lactobacillus is promoted and crowds out the others. Have you had success with not allowing the washed-rice water ferment first, but immediately combining with milk?

This is very similar to LAB. Do you know the differences in the two?
My understanding with LAB is you collect the bacteria into the rice water by letting it sit for 3 days then add it to the milk to select for lactic acid bacteria as they feed off the lactose in milk.
EM-1 seems to skip this first step and be much simpler.

Real simple. Get a gallon of unpasteurized milk. The a cup of spring water put 1/4 cup of rice in it. Let it sit a few hours stain out the rice. Add water to milk. Let sit in cool place for 8 days or less till milk curdles the stain out the curds best u can. Then add a cup of quantum light non sulfur purple bacteria u can get on Amazon add then 2 cups of molasses and your are good to go Will last at least 6 months.

I started making Lactobacilus with raw milk. Though the layer is separating but after two weeks, the top later has not become solid so that I can remove it. It is still white liquid. What is the problem.
