Well I built my first Kiosk app so I could get full screen of a website. It seems to work well but I am finding a particular limitation and possibly another.
First limitation is that I find the chromebox is not updating itself to the latest version. of chrome. The app auto launches in single app kiosk mode. Looking at management settings there does not appear to be a setting the I can choose to correct this issue. A useful setting would be when device updates then reboot. Another useful feature would be reboot device at X time. It may even be use full if I could send a command line to force an update on a chromebox.
The second that I still have to test is if the site that launches has content that changes will the chromebox update itself to show this new content or is it still running from cache indefinitely.
Any suggestions on these two I would appreciate to here from the community.

I don't think Google supports chrome sign any longer. The apps referenced are not available and Google has ZERO support for Chrome sign. There is no information from Google on how to set it up either. It looks like they have abandoned Chrome Sign.
