One comment for those using an older version of powerpoint like myself (2010), the Subtract inside Merge Shapes at 1:41 isn't available, but can easily be replicated by just creating 4 shapes around your text (top/bottom/left/right), make sure they don't have outlines and are the same inner color, then group them. Once your transitions are finished, use the Bring To Front so it sits on top of your scrolling numbers.
