I usually associate Lion’s Mane (Hericium erinaceus) with the colder months in Alabama so I was surprised when I came across a beautiful specimen on a very hot and humid day here! I can’t wait to cook this one. Have you found Lion’s Mane before? What months do you usually look for them?

When I’m looking for a good Lion’s mane for eating, I want one with “hairs” that haven’t yellow that much, for meat that is firm and bouncy, not wet and waterlogged, and for it to have a pleasant aroma. This one checked all of those!

That particular fungus is called "deer butt mushroom" in Korea. This is not a joke.

Careful of eating anything found close to roads, they usually have a ton of heavy metals from exhaust fumes

I actually grew my own lionsmane last year, didn't know how to cook it well but it was great fun. It was interesting to watch how it grew.
