You guys MUST try this recipe. I know it can seem a little scary eating raw beef, which is why it is important to know where you get your beef from. We recommend sourcing a local farm that takes good care of the animals and uses Grass Fed Beef.
INGREDIENTS:
-Beef Tenderloin (we use extra trimmings leftover from the tenderloin)
-Capers
-Lemon
-Pink Himalayan Salt
-Olive Oil
-Good Quality Parmesan Cheese
Get your fire nice, hot , and consistently burning with good embers. Place filet trimmings on hooks over fire about 1 1/2 feet above the fire. Let the smoke flavor the beef for as long as you like (we keep ours smoking for about 5-10 minutes). You will know when they are done when they have a slightly darker and cooked look to them. Once done, thinly slice the filets and top with the olive oil, capers, parmesan, and lemon.
