**please use a string to tie your cloth and not rubber bands (it’s very dangerous as they have toxic chemicals and can potentially melt in your food // it completely slipped my mind while making this video and i apologise for this mistake on my part)


my mom’s chole:

boil-
2 cups chickpeas (soaked overnight)
1/2 tsp kala namak (black salt)
water
in a cloth wrap-
2 tsp black tea leaves
1 black cardamom
2 green cardamom
4 cloves
1 cinnamon stick

- boil the above ingredients for 15-20 min (7-9 whistles)
- once boiled, drain the chola but reserve the water

tomato paste-
2 tbsp oil
3 tomatoes roughly chopped
3 green chilli
1 onion
1 tbsp ginger

once the ingredients have shrunk and look jammy, blend into a paste

gravy-
3 tbsp oil
1 tbsp cumin seeds
1/2 tsp hing

- let the cumin seeds pop

1 tsp turmeric
1 tbsp chilli powder
tomato paste

- as soon as you add the turmeric and chilli powder, add in the paste (this makes sure your chola has a lot of colour)

1 1/2 tbsp coriander powder
2 tbsp chola masala powder
1/2 tsp mango powder
1 tsp cumin powder
salt to taste
1 bay leaf

- cook all these spices for a couple of minutes (4 min)

add in the drained chickpeas
boiled chickpea water (about 11/2 cup) (enough to cover the chickpeas completely)
2 tbsp butter

- mix and cover for 10 min, let it simmer

1/2 cup chopped coriander

- ready to serve!!

The rubber band that you used can actually melt into your food due to the high heat. Try tying with a thread instead or try knotting the cloth.

Shivangi one suggestion isnt that a rubber band which u used for tying the spices . ?if so Shldnt have used it because it is harmful na ? Instead use a thread .

Shivangi this kulcha is only popular in Amritsar, not in all over punjab " makki di roti " and " sarson ka saag " with " lassi " (buttermilk) is the signature food of Punjab but it's fine too 😊 I'm just saying
