Lemon Chu-hai || Lemon Sour

Shochu, Lemon Cordial, Soda

If i could drink one cocktail forever it would probably be this, or a whisky highball. Light and refreshing, this version of the lemon chu hai uses a lemon cordial made with oleo saccharum. (other folks will call it a sherbet, but i call it delicious). The cordial can be used as a non alcoholic flavor booster if you’re observing dry January as well. All you really need is time for this project, and this cordial can be extended to other citrus fruits (though you might have to acid adjust).

45 ml | 1.5 oz shochu

20 ml | .75 oz lemon cordial

2 drops saline solution (20:80)

Soda, to top

Lemon peel, as garnish

In a highball glass, add ice, shochu, lemon cordial saline solution, and stir to chill. Top with soda, then mix gently to incorporate. Express lemon peel and place on top of the glass.

Could you dehydrate the left over peels to use as candy or garnish?

Do you find your clarified cocktails turning cloudy in the refrigerator? Not the freezer, just regular cold. Perfectly clear at room temp but once cooler it turns cloudy,
