I think it's more relevant to talk about which AI provider has the best privacy policy or how to stay as anonymous as possible. The reality of the situation is that the local models aren't that great if you don't have a very expensive computer enough to fit a 70b model etc.

Right now I think Claude has the best privacy policy and Grok on the other hand can be used with only email and no phone number so you can stay anonymous with a throwaway email and if you really want to you could use like tor or mullvad with vpn to mask you as a user further

I agree that data collection is data collection. But if you think China will share it, or sold it for pennies on the dollar to Western companies... well not quite. Only when you've been to China and have been assigned an officer on arrival, and forced to use their apps to comply to the Great Firewall you'll see the scope. They're not trying to make a buck out of you, you already pay for that Temu crap several times over. They're trying to see how dangerous you can be TO them, of course very few even make a blip in the radar but the more they know about you, even before you interact directly with their services as a tourist, or student, or businessman, or whatever, the better they can prepare against you. That country is a different beast.
