What we can learn from this video is a proven and simple procedure which is used amongst most Austrian restaurants. Just the video doesn’t show one important step, which is documented in her blog: Must put the lid on the pan again after first turning for some minutes - before cutting it. Usually this takes 3-5 minutes and you lid will almost come up ;-)
