It seems extremely high risk to let someone who hasn't eaten in 18 hours operate on a human. Most would just go eat quickly and come back. They'd just stay aware of the situation while eating.

Nonsense, I've been in multiple cases were Surgeons scrubbed out and took dinner breaks. Other staff typically switch out at the end of their shift, and are replaced.

I'd assume you basically go into the fight or flight mode since it's a high stakes situation, so your body turns off the signals it would send in the rest and digest mode.

My surgeon told me in school they did a transplant surgery. And I guess there were a few going on. He said something like 48 hrs or so and he didn't leave! I was like how?! I still don't get it!
