When life gives you lemons, you’re in luck :). Tart, bright, acidic, balancing...lemons have tremendous power to transform foods in the best way. If you’re looking for a lemon forward treat that tastes delicious but is low on guilt, look no further than these creamy, easy, lemon truffles that can be modified a hundred ways. Try rolling in shredded coconut, dipping in chocolate, adding some seeds etc. or enjoying one plain from the fridge. Recipe below. Enjoy!

Ingredients:
1 ½ cups (150g) almond flour
⅓ cup (40g) coconut flour
¼ cup (60ml) lemon juice
¼ cup (60ml) coconut oil (or vegetable oil)
¼ cup (85g) maple syrup / honey
1 tbsp lemon zest
1 tsp pure vanilla extract
[optional] icing / powdered sugar for rolling

1. Combine all ingredients in a food processor and blend until well combined. Mixture should resemble soft playdough.
2. Roll into tablespoon size balls and place on a parchment lined tray.
3. Chill for 10 minutes before rolling in sugar / coconut / chopped nuts (optional). They are also delicious without any coating.
4. Store in an airtight container in the fridge for up to 1 week or freeze for up to 3 months. Enjoy!
