I started tapping the bigleaf maples in my neighbor's yard a few years ago. My local microclimate typically only gets a few days a year with the right temperature swings, but I can collect gallons a day from each of the bigger trees. The house smells wonderful and the humidity is lovely for what otherwise would be the driest part of the year as I simmer it all down in batches. The color and flavor varies, but usually has a lovely smoky vanilla character that sets it apart from standard maple syrup. I take pride in giving a small bottle of finished syrup to the owner of the trees.

Wow. I did not expect maple syrup to be sapping in parts of Oregon. There are a hundred more maple trees across the states. Nice video, OPB! 👏🏿👏🏿😊

We've bought Neil's syrup before but it was a one-and-done kind of purchase. However, this vid gave me other ideas for its use and the various companies might consider including a bit of info/recipes with the package. Wonderful artisanal product.

So cool~! Having such limited tonnage, and a market placement strategy pushing Michelin stars and not pancakes, this should be a valuable northwest export commodity. Not a bad little retirement endeavor...

100:1 is like alaskan birch syrup. my family in minnesota makes regular maple syrup. Lemires maple syrup. never knew that you could tap big leaf maple though. i lived in sandy oregon for a decade before coming to Alaska.
