No need to make several copies of the text object. You can use just one. Then go into the appearance panel and add multiple fills and apply the different Gaussian blurs to each fill. That way you can change what the text says at any point. You can also make a graphic style out of the effect to apply to other text objects.

I didn't understand the part after 0:34 . for me it's just a rectangle with a gradient, not a colored glow around the letter.
