I generate varying degrees of top spin by concentrating on hitting the ball from low to high  with a slight angle on the racket. Having string which bit and a wide open pattern also helps. I change the swing angle depending on where I am in the court.

Excellent Simple Explanation and Demo. We UK coaches often use P-A-S path angle speed. Noticeable that your shots when with good margin over the net and the ball was rotating / spinning forwards towards the net

 a few months I played tennis with my friends, for the first time after 4 years, and I was playing top spins like I always did but I ended up hurting my wrists and they healed after a while. Anyway I started training again and my new trainer said that my grip at that point was wrong or something like that, but I think its that my wrists weren't used to the strain of hitting a topspin like before

Topspin Summary: 1. Racquet lower than ball before contact 2. At contact, racquet perpendicular to ball 3. After conact, racquet continues upward motion.

Absolutely right, but the faster you swing or the steeper the angle the more closed the racquet face will have to keep the ball at an appropriate height over the net.
A very hard shot by professional players like Nadal might have the face closed as much as twenty degrees.
This demonstration is appropriate for most recreational players.

This is not what most coaches say. They say to close the racket face and at contact open to about 45-60 degrees. If the racket face is perpendicular it goes out

Guys, guys, he said that it was just a simple demonstration for those who have NO topspin or who struggle severely when trying it. I don't think he's trying to pass this off as an ATP forehand or anything....

Guys, just a warning. You should always be hitting through the ball, which means having some kind of forward momentum on the ball. Never completely brush the back of the ball, because yes you will add spin. but you will get absolutely no power off your shot. A combination of forward momentum and the upwards brush is crucial for an effective topspin forehand. Degrees may vary when trying to control the amount of topspin where completely brushing is the highest degree, which is only good for lobs.

I disagree with your conclusions here, although I really like your videos. For a complete explanation of the physics involved, I recommend "Technical Tennis " by Rod Cross and Crawford Lindsay. In a nutshell, the reason you don't hit with the racket face flat is that the ball has velocity and is bouncing upward. If you hit flat, the ball will reflect upward like a ray of light hitting a mirror. By hitting closed, you send the ball off at a lower angle that still clears the net.

You have a habit of making a blanket statement, like things are just black and white. They are not.
The more vertical and faster the swing, the more you can close the racquet face.
There is a constant trade off of balance in height spin and speed, developed by swing path, swing speed and racquet face angle.
I've done this so many times it's boring, but I will post links to a few videos of Nadal hitting forehands FROM THE BASELINE with a face closed just as much as the most extreme angle you displayed in your demonstration.
Note that often Nadal is hitting the ball low on the racquet face causing it to twist after impact, making most shots look like he has a closed face even if it is neutral, I included only ones where the racquet face was closed before impact and in slow motion so that it is easy to see.
