In humans and most known animals, that compound is hemoglobin and is iron-based, resulting in red colored blood. In horseshoe crabs, it's hemocyanin, which is copper-based, making it blue to blue green. There are also a few creatures which have purple (peanut worms), yellow (sea cucumbers), or even colorless blood, based on their respective compounds or even a lack thereof. Antarctic Icefish have colorless blood with no haemoglobin or pigments, and have presumably developed a mutation due to living in such an oxygen-dense environment they don't need a protein to absorb oxygen into their bodies anymore. PBS Eons did a cool video about "the evolution of blood" or similar title, and it was pretty interesting.

The shininess is a mucus-like substance secreted during and after moist weather. They also glow in the dark. Despite the fact that they are poisonous, a single interrupta should not cause much damage, as they are very small, but it would still be wise to avoid consuming the magical glowing blue mushroom.
