I always use my second hihat for blasts to.It's more comfortable for me to do the open handed thing for the blasts.

I don't think that hi-hat thing is just about the look. There are two main cymbals that ride the song or beat, one is hihat and the other one is ride (usually, just generalizing). Now if you think it in mix, again usually, they are in opposite directions of stereo image. That guy might want them not to sound from same direction. That's my opinion
