I think it's the brand you're using, personally. I have yet to try anything from artist's loft that wasn't crappy (though I do like their watercolor paper for practice pieces). I've been using the HIMI and MIYA jelly guache for a while now and I don't find them watery at all, unless I'm trying to use them as watercolor. I find they're more like acrylic paint.

The one you have says Artist's Loft and not Himi. Maybe you bought a knock of one?

helly gouache is a piece of junk. Get tuirner design gouaxhe or holbien. Also color mixing is an essential skill. Just learn it
