Η άνοιξη της θάλασσας

Κάθε εποχή έχει τις δικές της γεύσεις, αλλά η άνοιξη είναι η πιο γενναιόδωρη. Τα αφρόψαρα, όπως η σαρδέλα και ο γαύρος, κάνουν την εμφάνισή τους, οι κουτσουμούρες είναι στα καλύτερά τους, τα φαγκριά και οι συναγρίδες γεμίζουν, προετοιμάζοντας τον νέο τους κύκλο.
Το λαβράκι, αφού γεννήσει, αρχίζει να αδυνατίζει, και η θάλασσα αλλάζει. Όλα ακολουθούν τον ρυθμό της φύσης, και μαζί τους αλλάζει και η γεύση στο πιάτο.
Για μένα, η άνοιξη είναι η πιο όμορφη εποχή της θάλασσας. Για εσάς;

The spring of the sea.
Every season has its own flavours, but spring is the most generous. The frothy fish, such as sardines and anchovies, make their appearance, the burbot are at their best, and the faggots and the synagogues are filling up, preparing for their new cycle.
The sea bass, after giving birth, begin to slim down, and the sea changes. Everything follows the rhythm of nature, and with it the taste on the plate changes.
For me, spring is the most beautiful time of the sea. For you?
