Why Overripe Bananas Are Best for Banana Bread

Banana Bread (yield: 1 9in x 5in loaf)

1 c (227g) bananas, very ripe and mashed
1/4 c (57g) buttermilk
2 eggs
1/2 c (100g) vegetable oil
1 tsp vanilla extract
3/4 c (150g) sugar
1/4 c (53g) brown sugar
1.75 c (245g) AP flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/3 c (59g) mini chocolate chips

1. Mash very ripe bananas until smooth. In the same bowl with the bananas, whisk together the remaining wet ingredients and the sugars.
2. Add the flour, baking powder, baking soda, and salt to wet ingredients and stir just until you can't see any streaks of dry flour.
3. Mix in the mini chocolate chips.
4. Pour into a greased 9in x 5in loaf pan and bake at 350F (177C) for 60-70 min or until a toothpick inserted in the center comes out with wet crumbs and the internal temperature reaches 200-206F (93-97C).

We always use uneaten bananas for banana bread. Most of the time those bananas are almost completely black, but the banana bread is heavenly

We use almost all black bananas in chile, it can even taste like rum.
Much more complex and tast.

Put them in the freezer if you don’t want to wait on the paper bag method. They turn completely black, which is actually just the ripening process sped up by the crystallization of the water in the cells of the banana which speeds up the breakdown of the components that give you that flavor.

I just made banana bread with extremely ripe ones. Like wrong move and they separate from the stem. Added strudel topping omg it was good!

That banana wasn’t ripe enough. Me and my family always wait till it’s completely black and soft where it’s basically a pudding inside. Makes the sweetest banana bread you could ever imagine!

My Mom always made her Banana Bread w Chunky Bananas and some mashed and Walnuts... and always use DARK Brown Sugar... when it's done. Slice while Warman SMEAR BUTTER ON. 😱.. IT was Amazing.. she litterally made the best 😗👌.. 💝
