In today's video, we'll be making some really easy Easter side dish recipes. I'm making a Cheesy Potato Casserole (aka Funeral Potatoes), Smothered Green Beans, Garlic Parmesan Roasted Brussels Sprouts, and Oven Roasted Sweet Potatoes. These were all really easy and some could definitely be made ahead or have steps that can be completed ahead of time. These would be great for your Easter gatherings or just any day. We really enjoyed trying these new recipes and have found some new favorites!

I am a potato lover as well! At our Easter we always have Ham, Deviled Eggs and then a variety of sides. Great side dish ideas. I always need side dishes for dinner! Loving this collab!

Came over by way of maegan and taylor - great recipes! funeral taters are always a hit and leftovers can make a wonderful potato pancake if mashed and fried. (if your casserole is super wet, just add instant mashed tater flakes to bulk it up) . Also, with the sweet potatoes, instead of painting them one at a time, just dredge the slices in the butter bowl first and then drop them into a baggie with your spices and sugar - shake n bake style - saves you a bunch of time and gets every side coated with a good layer of the mix. <3

We’re doing breakfast for our main Easter meal this year. One of our daughters works midnights and the other one has to be at her husband’s family for dinner. My husband requested that I make lasagna for our Easter dinner lol. We normally have lunch / dinner with ham, potato salad, and Mac & cheese. And always deviled eggs. Love funeral potatoes! But I was far more interested in the green beans & sweet potatoes. I’m the only one who eats sweet potatoes so that would be something 1 potato and I’d have enough!

We usually have ham & sides like potato salad, green bean casserole, sweet potato casserole, etc. Those potatoes looked good… I bet you could top them with crushed potato chips or French fried onions too.

im with you Amanda, i love potatoes no matter how they are cooked, traditionally we have ham for dinner but sides always change, but ham mashed taters n gravy ... rolls almost a staple at any holiday meal, thankgiving is more traditional foods, but i love food so it doesnt matter what it is as long as its delish!!!! ty for a great video, i have to say i love the music u play upon intro .... love it i always have to dance a lil when i hear it !!! so upbeat and fun!!!

Hey girl! Back to watch again and comment. I have really been wanting to make that potato casserole. I love the cheesy potato casserole name, soooo much better. Funeral potatoes sound terrible! Lol. That is such a fun Easter Tradition. And you can't go wrong with KFC. Their mashed potatoes and gravy are so good. I've never even thought to put soy sauce in my green beans. Yum! That's a pretty way to serve sweet potatoes. I love when they get all caramelized. So good! You know, I've never had roasted Brussel sprouts. I love them. I eat them a lot, but I buy the steamable bags and microwave them, then eat them justblike that. Haha🤣 I've got to try them like that now. I bet my husband would eat them if i cooked them like that. I need to make those brussels sprouts! I'm the only one in the house that enjoys them. Yours look so good. I also make a version of the funeral potatoes. We actually call them "Easter Potatoes" . I never added anything on top though, just cheese. I like how you added some crunch!

I cannot wait to try the green beans. So simple but yet a new way to serve boring green beans! We have been making cheesy potatoes FOR YEARS LOL. So funny how some dishes are geographic in nature. Probably make them every other month here. I prefer to thaw the potatoes first and sometimes I make the taters from scratch. Actually my family prefers the shredded potatoes in it. I recently cut out a recipe from costco that makes a potato stack - the sweet potatoes might be interesting that way too. And finally, try as I might I cannot get my family to eat brussel sprouts 😡 Thanks for sharing Amanda!
