I cut mine still frozen. Makes for some nice thin slices. You can cut it paper thin if you want.

Tried this today. Seasoned last night and put it on the smoker this morning. Just about 4 hours total and wow did it come out pretty good.

Great illustration. I’ve always sliced thinly from the large whole muscle. It works but tedious. I’ll definitely have to try this method. Thank you Mr. Perkins 👊🏼

That’s the way my dad used to make our deer into jerky. I never really preferred the stuff that gets ground into paste and squeezed out of a jerky gun, it just isn’t the same!

My recipe. Guessing the amounts I usually just pour everything together and adjust to taste. 1/4 cup soy sauce, 1 cup pineapple juice, 1/2 sweet onion diced, 3 cloves of garlic minced. Adjust to a teriyaki like flavor. Marinade for 24 hours or longer. Line the bottom of the oven with aluminum foil and curl edges up it's going to drip a lot. Hang jerky on toothpicks on top rack of oven. I usually go for 2 or 3 pieces per toothpick. Set the oven as low as possible on bake and leave the door cracked. About 3 to 4 hours. Just keep checking it. A smoker is better but not everyone has one.
