What kind of knight has plate pauldrons and gauntlets but not a helmet or chainmail or breast plate. Even lowly men at arms had a helmet and breast plate. Even very poor knights would have a gambeson with a chainmail shirt over it and then a hardened leather breast plate over it, along with a steel helmet and vambraces along with some other hardened leather armor, like pauldrons(or small circular steel shoulder guards) and shin guards.

The absolute poorest knights usually had a gambeson, steel helmet, and either a long chainmail shirt with small circular shoulder guards or a hardened leather breastplate, with shoulder guards, vambraces and leather gloves.

I do have to say, however, that setup you have would look absolutely awesome with the addition of a helmet and either a chainmail shirt or a hardened leather breastplate. In combination with those pauldrons and gauntlets it would look soo badass!

You just dont see hardened leather armor anymore especially in roleplays and HEMA. Which is very unfortunate because many of the poorer knights would have a full set of hardened leather armor over a gambeson and chainmail shirt and it actually worked amazing and looked fcking awesome! They even had hardened leather helmets!

Now these poor knights would slowly supplement their pieces of their armor with steel plate. Usually starting with a helmet, then pauldrons, vambraces, greaves, shin guards, and finally a breast plate.

One of my favorite setups is a gambeson, chainmail shirt, steel helmet/visor, steel pauldrons, and hardened leather breastplate, vambraces, shin guards, and leather gloves. I just love the look of a young broke knight slowly working his way up but still has a very effective albeit cheap kit...
