re: wet filling

it's probably the cabbage. when prepping the cabbage, cut/throw it in a food processor, and just grab it with your hands to squeeze out excess moisture over another bowl. regular green cabbage has a surprising amount of water in it, and napa has even more

So gyoza is the Japanese version of dumplings and has the unique combination of the crispy bottom and steamed top giving you multiple textures versus just a steamed or fried dumpling. The combination of textures just makes for the best dumpling

If the pork skin smelled like a mixture of *bad* BO, urine, and a dash of onion, it’s likely boar taint; which happens when pig processors sneak boar meat in with domestic pork meat.

If it was a kind of sulfur smell, that’s fairly common, and can be washed off by soaking in ~2cups of white vinegar per ~1gallon of water.

If it smells putrid and is rotten, the smell will greatly intensify while cooking, and spoiler alert: don’t eat that pork.

I used to buy pork skin semi-regularly back when I lived in Estonia. From a supermarket (granted they had fresh meat and a butcher working every weekday morning). It never smelled bad.
So something is wrong, either it went bad over the course of the 1, 5 days that David mentioned or whatever was up with the boar taint. Likely the latter, I dont think anyone could eat boiled pork skin that's gone bad.

I think the soup dumpling’s sauce is a must have?, cuz in my country everytime i ate soup dumpling i always get the savoury and sour sauce so i think you should eat it with the sauce

The soup dumpling wrappers are generally home/house-made because most (if not all) dumpling wrappers don't have the thicker center and the thinner outer which means that if you use the store bought ones, the pleated parts of the dumpling would be super thick and doughy. Also, from my observation, they didn't look very soupy at all - juicy, yes, but not soupy; like there should be literal soup inside that comes pouring out when the wrapper is broken.

Make your favorite food that your Mom or Dad made you as a child (no box or caned stuff, LOL), try to make it exactly from memory, no recipe or help, and see if your parents think you made it correct. Then make it again but better and elevated.

Just to be a stickler- you should use Chinese chili oil like Lao Gan Ma since it has more flavor and is spicy. Calabrian chilies don't fill the same role

Yes, the second ones are usually called gyoza or potstickers! They have slight differences but are pretty similar. They are usually my go to dumplings!

what I like to do when using napa cabbage in my dumpling is after mincing/slicing it I salt it and wait 10-20 mins for the water to be drawn out then squeeze out as much water as possible out of it. The volume will shrink a lot but it makes for a better filling! Also that dumpling folding skills damnnn

For soup dumplings, we usually eat them with vinegar and ginger eventhough they were also quite good on its own. Vinegar gives the dumplings an extra 👌and also soup dumplings should have soup gushing out on the spoon, so maybe you need to add more

Today I learnt that tasty stole sorted food's few minutes vs many minutes vs hour format. Sorted made a dumpling video like this two years ago and they'll actually take the time they claim to take lol
