*This recipe is for 2 log cakes.

Ingredients
1. Chocolate Brownies (833g)
 8 eggs (216g)
 130g fine sugar
 210g dark chocolate (couverture)
 67g unsalted butter(melted)
 65g baking powder
 140g chocolate chips
2. Chocolate Sponge Cake Layer
 6 eggs (300g)
 Chocolate sponge cake premix (300g)
 60ml water
 60g corn oil
3. Chocolate Ganache
 400g dark chocolate (couverture)
 450g whipping cream
 75g glucose
 75g unsalted butter

Part 1 – Chocolate Ganache
1. Add glucose to the whipping cream.
2. Melt chocolate chips and heat up the whipping cream.
3. Pour whipping cream into the melted chocolate and mix well.
4. Add butter to the mixture and stir well. Leave overnight to set the ganache.

Part 2 – Chocolate Brownies
1. Melt chocolate chips and butter.
2. Pour melted chocolate into egg & sugar mixture and stir well.
3. Add flour and baking powder into the mixture.
4. Add in chocolate chips and stir well.
5. Pour the mixture into a baking tray and spread evenly.
6. Set oven to 170 degrees and bake for 20 minutes.
7. Cut brownies into chunks.
8. Beat on medium speed and add chocolate ganache into the mixture.
9. Weigh 400g of chocolate brownie mixture.
10. Roll the chocolate brownie mixture into a long tube and set aside.

Part 3 – Chocolate Sponge Cake Layer
1. Pour chocolate sponge cake premix into bowl and add in eggs.
2. Whip until fluffy then add in water and corn oil.
3. Pour mixture onto baking tray and spread evenly.
4. Set oven to 180 degrees and bake for 7 minutes.
5. Spread chocolate ganache onto the sponge cake evenly.
6. Sprinkle chopped walnuts, add in chocolate brownie filling and roll up the cake.
7. Put the cake in the fridge for 10 minutes.
8. Spread chocolate ganache coating onto the cake to create a log tree effect.
9. Cut the cake into half and cover the side with chocolate ganache coating.
10. Drizzle the cake with more chocolate ganache and add in decorations.
11. Sprinkle snow powder to create a snowy effect.
