Christmas Shortbread Swirls!
Shortbread Ingredients:
1 cup Vegan Butter, softened
3 Tablespoons Granulated Sugar
1 teaspoon Vanilla Extract
1/4 teaspoon Sea Salt
2 1/2 cups Flour
Chocolate Shortbread Ingredients:
1 cup Vegan Butter, softened
1/2 cup Granulated Sugar
1 teaspoon Vanilla Extract
1/2 teaspoon Sea Salt
1 1/2 cups Flour
Mix each shortbread separately. Start by creaming the butter & the sugar, then adding the remaining ingredients and just mixing until smooth being careful not to overmix.
Roll out each mixture on a separate piece of parchment paper to roughly the same size. Place one over the other and roll up like a jellyroll. Wrap the log in the parchment paper and let chill in the refrigerator for 1 to 2 hours. When ready to bake, unwrap and slice off 1/4 inch slices. Bake ar 350 degrees for 15-16 minutes. Let cool completely before removing from baking sheet. Enjoy!
