The iPhone 7 Plus is an all-around solid iPhone that even gives the brand new iPhone XS Max and iPhone XR a run for its money in terms of performance.

A few weeks ago I bought an iPhone 7 Plus matte black, 128gb, with 100% maximum capacity battery health for $300. You just have to keep looking for good offers and be patient.

Edit: the condition was absolutely perfect as well, not a single scratch. The seller only sold it because they had just bought an iPhone X and wanted to get rid of the 7 Plus.

Tbh, the iPhone 8 and the iPhone 7 Plus are basically the same thing, literally the only difference is that the back is glass.
