Quiche with zucchini flowers, scamorza & smoked bacon

INGREDIENTS:
Zucchini flowers 5St.
Scamorza 120gr
Smoked bacon 120gr
Cream 150ml
Eggs 4St.
Parmesan 60gr
Breadcrumbs 60gr
Puff pastry 1St/230gr (we used a cake stamp of 26cm)
Salt j.e.
Pepper j.e.

STEPS:
1. Cut zucchini flowers and clean them
2. Clean & Cut zucchini in cubes
3. Cut also cheese (scamorza) in cubes
4. Put a bit of Olive Oil into a pan with garlic and cook the zucchetti, add salt & pepper as much as you wish
5. Repeat the cooking with smoked bacon and mix them with zucchetti
6. Prepare the royal with eggs, Parmesan, salt & pepper
7. Mix all the prepared ingredients
8. Adapt the puff pastry into the cake mold and create holes with the fork
9. Add breadcrumbs, cheese (scamorza) & royal
10. Add another bit of breadcrumbs and cheese
11. Cook into the oven at 160°c x 40min

Little secrets 😉

1. The royal is a typical term used in kitchen and sometimes its the base of the quiche.

2. Why the breadcrumbs? The breadcrumbs are ueeful to dry the liquids that all the ingredients could release.

3. As an alternative to scamorza, don’t use mozzarella cheese because it releases too much water. If you just have mozzarella avaiable, add more breadcrumbs to dry the liquids.
