Can't speak for keto folks, but my doctor has me on a carb restriction of 60 grams per meal due to diabetes, which has definitely helped manage it. 150 grams of green cabbage has about 3 grams of carbs, so this would fit extraordinarily well in a moderately carb restricted diet.

After you 'fillet' the slice into 2, you should cook the wet side so make it more rigid/drier. Leaving it with the inside uncooked, you make a sloppier sandwich.

You can tell a cabbage is so fresh when it squeaks like that when you cut into it. Cabbage is so versatile and healthy. The best.

cabbage is a very low carb veggie option, and w/~2.3g/serving, even works for the keto crowd, who generally are shooting for < 5

Can you try Norway's national dish? Fårikål, meaning mutton and cabbage stew. It's such a traditional Norwegian autumn comfort food and extremely easy to make!!

Cottage cheese flatbread is something you might also want to try. It is amazingly similar in taste and texture to bread, but the batter is more pancake-like. (it's a bit different than the cottage cheese loaf you made a while back.

Hi Emmy, I also have issues with wheat a lot of the time. For noodles I use either buckwheat, konjac, sweet potato or kelp noodles depending on the recipe I want to use noodles in. Hopefully some of these options work for you too.
