I love t his & make it often ... however I discovered a trick to add a whole extra layer of flavour ... CHAR THE CORN FIRST! Add it upon dishing, not before! The charring (and I do so in real butter to make it caramelize) and a sprinkle of Tajin seasoning once charred is a total gamechanger!
And yes, I am aware I am about as far north as a person can be from Mexico, but I learned charred corn, aka Mexican Street Corn" & absolutely ADORE the new layer of flavour! Thsnk you Kev! Love your posts!!

I make this but I will use two cans of fire roasted tomatoes, a jalapeño, the zest of lime, and use a Southwest Chipotle blend from MrsDash. We top it with fresh avocado chunks, cilantro, fresh lime juice, and shredded cheese then eat with tortilla chips.

For the chicken if I’m really busy I’ll put some chicken breasts in the crock pot with a can of tomato’s or rotel. If I have a rotisserie chicken from Costco or Fresh Market then I’ll use that.
If I have fresh sweet corn on the cob I’ll use that.
