First of all this is not appam, as a. South-indian gurl i know that this is not appam this is called ' appe' and appam and appe are very different

1)If you are using dosa batter for making appe there is no need to put baking soda in it, they will be fluffy by default.
2)no need to use banana leaves in this it is anyhow complicating the simple process.

Making proper batter need not any extra thing like banana leaf may be it good....but for this dish not necessary....I use cast iron it vll come out very well
