We know you like grilling with high heat because who doesn’t like playing with fire? Just make sure you’re never searing with the probe still in the meat. Here are a couple of techniques so you can do your high heat searing while avoiding damage to the probe.

Reverse Sear
1. Cook your meat low and slow with the probe in over indirect heat, i.e. not directly over flames.
2. After removing the meat from heat, resting, and hitting your target temp, let the meat rest a bit longer to let the temp drop and do your high heat searing all around the meat after you’ve removed the probe.

Sear First
1. Without the probe, sear the meat on all sides to your liking.
Give the meat a mini-rest, about 5-10 minutes.
2. Insert the probe, set up your app, and finish the cook over indirect heat.
Follow the app instructions to get to your final target temp.

Meater, I need you to implement the ability to set an alarm for the Ambient in your app. I need to know when my smoker gets too hot or too cold so I can adjust the fire. Say when smoking brisket, a low alarm of 200 and a high alarm of 300 would make life soooo much easier. Why is this not a feature????
