Who says veg can’t be tasty and delicious? Vegetable like potatoes, cauliflower, carrot, beans and list can go on combines in this one exotic Goan Gravy XACUTI. Traditional Goan recipes with Coconut & all the dry spices roasted and mixed with the sautéed vegetables taste best with Goan Pulao, Pav, steamed rice. Here is my version of Vegetable Goan Xacuti. Try it

Ingredients
1+ 1/4 cup Fresh Coconut
1 medium Onion sliced
4-5 Garlic
1/2 inch Ginger
1/2 tsp Cumin
3 Byadagi Chillies
1 tsp Coriander
1/2 inch Cinnamon Stick
1 small Star Anise
Small piece Mace (Javitri)
7-8 Cloves
1/2 tsp Peppercorns
1/4 tsp Tumeric Power
1 tbsp Fennel seeds
1/2 tsp Sesame Seeds or poppy seeds
Green Chillies ( according to taste)
Handful of Fresh Coriander

Vegetable to Roast
1 tbsp Coconut Oil
1 medium Potato
1 cup Cauliflower
1/2 cup Carrot
1/2 French Bean
please note you can take vegetable of your choice like Mushrooms, Green peas many more

1 tbsp oil(Coconut Oil)
1 big size Onion sliced
Few Curry Leaves
1 small ball Tamrind
