Pancakes are a fun food anytime of day. Add in some chocolate chips and orange to create a new treat delight.
Gluten-free Chocolate Chip Pancakes with Orange
INGREDIENTS:
- 2 tbsp ground chia seeds
- 6 tbsp water
- 1 cup gluten-free oats, ground into flour
- 2 tsp baking powder
- ½ tsp salt
- 2 tbsp orange zest
- ¼ cup fresh orange juice
- 1 cup rice milk
- 2 tbsp melted Earth Balance
- ½ cup PASCHA 55% Chocolate Chips
DIRECTIONS:
- In a small bowl, make two chia seed eggs by mixing the ground chia seeds with the water. Set aside
- In a food processor or a blender, grind the oats into flour.
- In a mixing bowl, add ground oats, baking powder, salt, and orange zest. Mix well.
- Add the chia seed eggs, orange juice, rice milk, and melted Earth Balance to the dry ingredients. Mix well.
- Add the PASCHA 55% Chocolate Chips and stir to combine.
- Melt a small amount of Earth Balance in a frying pan.
- When pan is hot, add pancake batter into desired shape.
- Cook until bottom is brown, and flip to repeat.
- Remove from pan when fully cooked.
