A few details: It is strange to have glossy interior because it is not an option if printed on Amazon (only covers have the glossy option).
Same for perforation, not an option on Amazon publishing.
These people might have outside of Amazon publishers.

Also, you mentioned the watercolor aspect of Poortoast illustrations, this is due to the fact he prints in 'standard colors', not 'premium colors' and this way he can afford to offer so many more pages.
If printed with premium colors, a book this size would have to charge a minimum of $29.40 to make minimum royalties. Of course I am talking about KDP Amazon printing.
All this does not mean other authors are greedy charging almost the same price with fewer pages, simply most people print with premium colors and it is very pricy.
