2 large garlic cloves, crushed
½ cup olive oil
1 lb Shiitake mushrooms or any fresh mushrooms of your choice, preferably button mushrooms, halved
¼ cup chopped fresh parsley
1 tsp fresh thyme
2 tbsp balsamic vinegar
4 oz cherry tomatoes, halved
4 oz arugula or spinach
¼ cup goat cheese, crumbled
Salt & ground black pepper to taste

To serve:
1 cup chopped roasted walnuts
Balsamic glaze
