Coriander Seeds - 3 1/2 tsp
Peppercorn - 2 1/2 tsp
Cumin Seeds - 1/2 tsp
Fenugreek seeds - 1/2 Tsp

Into mortar pestle, Pound coarsely.

Tamarind - 1 gooseberry sized(soak it for 15 mins)

Cooking:
Coconut Oil - 2 Tbsp
Mustard seeds - 2 Tsp
Dreied Red chillies - 2
Ginger - 1 small
Garlic - 4
Shallots - 5
Tomato - 2
Spice Mix - add whole
chili powder - 1 Tbsp
Curry leaves - 8 leaves
turmeric - 1/2 tsp
asafoetida- 3 to 4 sprinkle
Coriander leaves - 1/2 cup

Start by adding two tablespoons of coconut oil to the pan. Allow the oil to heat up
Once the oil is ready, toss in 2 teaspoons of mustard seeds. Wait for them to crackle. Now, add the whole dried red chilies and let them sizzle for a moment. Once they slightly change color add the finely chopped ginger, garlic, and shallots to the pan. Let them cook for a few minutes. Stir occasionally,
Once that’s done, it’s time to add the spice mix we prepared earlier. First, add the coarsely pounded pepper, cumin, and fenugreek mixture. Toss in a few fresh curry leaves
Now, add in the coriander powder, chili powder, and turmeric. Mix everything well, making sure the raw smell of the spices disappears and the flavors blend together.

And now, we’re ready to add the tomatoes. Let them cook down with the spices, i am only adding 1 and half tomato now , rest i shall add later ..

Start by adding salt to taste –Next, pour in the tamarind water that we soaked earlier, followed by two cups of water ,left over tomato and add 3 to 4 sprinkle of asafetida. Mix everything well to ensure all the ingredients are combined perfectly.

Bring the mixture to a gentle boil, and as it simmers, add a few fresh curry leaves and the finely chopped coriander leaves.

Give it a good stir, then close the lid and let it boil for about 5 minutes.
