Greek Chicken Kokkinisto

1/2 Chicken pieces
2 C Chopped tomatoes
1/4 C wine
2 C water
1 Chicken stock

1 carrot
2 onions
Salt
Pepper
1/2 Tbs oregano
1/2 Tbs Basil
1/2 Tbs thyme (optional)
1 tsp salt
1/4 tsp pepper
1/4 tsp cinnamon

Pre boil the chicken pieces with water.

Add olive oil to a pan and saute the chopped onion, carrot and saute with a bit of thyme.

Add wine and continue stirring until all mixed.

Add the tomatoes, salt, pepper, basil and oregano and the rest of the ingredients.

Add 2C of water with the chicken stock.

In another pan add the chicken pieces and season with salt, pepper, olive oil and mix it all in.

Once it has browned well and is almost cooked add it into the tomato mixture.

Allow the chicken and tomato to cook with a lid on for around 1 hour until the water has reduced.

Taste and season further if you need.
