Aside from lumpia (Filipino spring rolls), pancit (Filipino rice noodles) is one of the most sought after dishes in any Filipino gathering. Pancit has several varieties but Pancit Bihon Guisado is the easiest to prepare. It's not only delicious but it also plays an integral role in Philippine culture and history.

Filipino Rice Noodles | Pancit Bihon Guisado
INGREDIENTS:
1 pc medium onion, sliced
4-5 cloves of garlic, minced
1 medium | 160g carrot, julienned
1/4 cup celery, chopped (celery stalks may be used as well)
½ small | 300g cabbage, chopped
15 pcs | 70g green beans, sliced thinly (use snow or snap peas as an alternative)
3-4 Tbsp soy sauce
2 pcs | 227g bihon noodles (Super Golden Bihon brand)
900ml water
1 heaping Tbsp of Better than Bouillon vegetable seasoning
2-3 yuba/bean curd sticks (optional), soaked in hot water for at least 1 hour (or use fried tofu instead)
salt and freshly ground black pepper to taste
