i left the burner on by mistake for a few minutes, the sauce i was using had a high sugar content, so now i have a nice layer of carbon, burned sugar and utter blackness for a wok.

After you take the wok out of storage and want to use it do you just use it as it is? or clean it a bit before? just asking because the layer of oil while you store the wok might become rancid i think

She says you can boil with your wok but according to the book Stir-Frying to the Sky's Edge: "Although the versatile wok can be used for more than just stir-frying, avoid boiling, poaching, or steaming in a new wok, because water dissolves and dries out the patina. In fact, for this reason, many traditional cooks have a wok designated only for cooking with water and another separate wok reserved for stir-frying, pan-frying, and deep-frying."

A well seasoned wok doesn't stick and need scrubbing, it should be almost black for a great non stick performance.
