Potatoes, like many other agricultural crops, are of the nightshade family.
This is why you don't eat them if they're green. The 'living' green part means they have very high concentrations of solanine.

Also, Solanine is very similar to the name of the family of of the Potato, Solanaceae (I don't know if the Compound or the Family was Named first😅)

I've had potatoes that were partially green, had no issues deep frying them for potato chips. Whole green? That sounds like they were unripe. Mine were sitting around for months.

That’s not entirely accurate. The green is from chlorophyll where the potato was exposed to sunlight. Solanine isn’t green. However, the chlorophyll is an indicator that solanine is present, as the potato creates solanine to protect its exposed tuber from pests.

Regular cooking doesn’t destroy solanine. Boiling temperatures are not high enough. Frying does break it down, though, so green potato chips and other fried potatoes are safe. It’s also why fried green tomatoes (which also contain solanine) are safe to eat.
