Japanese Pumpkin (Kabocha) Salad Recipe!

The Japanese pumpkin salad, aka kabocha salad, is a perfect fall appetizer or side dish!

[Ingredients]
1/4 kabocha
1/4 onions
2 slices thick cut bacon
2 eggs
3 tbsp Japanese mayo
1 tsp vinegar
1/2 tsp ajinomoto
10g butter
1/2 tsp salt

1. Cut kabocha into a quarter, empty out seeds, cut into small pieces.
2. Put into pot of water along with pinch of salt.
3. Bring to boil, then simmer in low heat for 15 minutes.
4. Sauté sliced onions & bacon, then cook 2 eggs.
5. Put kabocha into large bowl along with the onions/bacon/eggs.
6. Add the rest of the ingredients above.
7. Mix, squish, stir until they're all even. Add peppers, enjoy!
