Kaneki Ken has gone through some name and hair changes all throughout Tokyo Ghoul and Tokyo Ghoul Re, but what it mean? We see his hair go from black to white as Kaneki, then as Sasaki Haise it was black and white, then as Black Reaper Kaneki / Haise it black again, before it turns white again. Many people point to real life parallels, which while cool, isn't the real answer.

From what I've heard, hair changing colours is also a result of weird RC reaction bullshit. So even though yes, it has a story purpose, in terms of the lore, white hair is just an occasional trait of Ghouls. That's why several other Ghouls or Hybrids have white hair.

I’m at the part just after they finished the fight in the giant lab. With all the “ss” Gouls. And Kaneki started having a breakdown about wanting to protect his friends. I thought his hair turned white as a trauma response-

People in comments are debating each other about if it's stress or what, but actually no one said the real reason what it's explained in the manga, though I think you are totally accurate in the symbolism that is behind. The reason his hair keep changing it's color, or better said, why does it gets gray time to time, it's because there was a component between the cells (at least in ghouls) that allow them to regenerate, but the overuse cause it to deteriorate, in other words, he just got older after healing again and again in a really short lapse of time, as it happened with the torture, also the color of his nails changed for the same reason. It was a similar thing what happens to Arima kind, only that for ghouls, it doesn't lead to death from ageing. I think Arima comment on the topic in their final battle, when he told Kaneki about himself. Still, they explain it in the last arch of the manga, when the ex girlfriend of Nishiki came back to the scene. It was also a theoric explanation since they didn't know where was the real limit of it, so even if they couldn't say at all if Kaneki would run to the edge eventually or if he would recover that ability on his cells replacing them in time, they at least warn him that he could lost the ability to regenerate so he should be careful. I hope this will be useful, as surprisingly no one was commenting this, even manga readers xD.
