Thermomix Mushroom Chicken Rice

One pot rice meals prepared in a jiffy for 6 people.

Ingredients
400g free range chicken, chopped into bite-sized pieces
40g dried shiitake mushrooms (rinsed and soaked in 50g water)
5 dried scallops (rinsed and soaked in 50g water)
300g white rice
400g water (including the soaking water)
10g old ginger in slices
25g sesame oil
1 tsp salt
1 tsp white pepper
Chicken Marinade
30g light soy sauce
20g dark soy sauce
1 tsp salt
Garnishing 2 stalks of spring onions, chopped
Method
1) Marinate chicken for 30min.
2) Soak shiitake mushrooms until soft and cut into small pieces.
3) Place ginger, sesame oil and mushrooms to sauté 3min/120°C/speed 1.
4) Add marinated chicken and cook 5min/120°C/Reverse speed slow stir. Pour gravy into an empty bowl for later use. Set chicken aside.
5) Place water, rice, chicken, dried scallops into mixing bowl and cook using the rice cooker mode.
6) Leave rice to rest in the mixing bowl for 10min. Remove and place into ThermoServer.
7) Pour some gravy over the chicken rice and mix well. Sprinkle some spring onion before serving.
