aperture priority will lower the framerate in favor of exposure, there's almost always a control to set shutter priority or manual exposure

Checkout the ps3 eye camera, it's cheap and capable to capture up to 150FPS at 320x240 and 70FPS at 640x480. The problem is that it's tricky to get it to work at those framerates on python(It seems to handle only 60FPS), It works fine on C#(150FPS).
Other option is PS4 camera with 120FPS at 640x400 and 240FPS at 320x190 and it's a stereo cam so it may work for interesting CV projects, I haven't tested it on python yet but soon I will.

Does the linux kernel support it? If you can, see if it works in the jetson nano. I am pretty sure jetson has the oldest linux kernel of the common SBCs.
