Loved this video!! I agree you should check out the coast. There is a popular route called la "ruta del sol" that goes through most of the beaches on the coast.

I've only been to Ecuador once, as part of a high school cultural exchange type trip where me and my friend stayed with at the home of a village family in Machalilla. We got to see Friailles Beach, which is probably the nicest beach in the country, but not that special compared to the Caribbean, Mexico or Brazil. Just a nice big sheltered bay with a clean sandy beach, surrounded by forested hills and with a little snack bar on the beach.

We also took a little boat ride to Isla de la Plata and saw sea turtles, fish and sea birds, but if you're going to Galapagos, then there's no point, Isla de la Plata is just like a discount Galapagos. The Malecon and Santa Anna Hill in Guayaquil were nice but it seems like Guayaquil is not as safe these days (although it wasn't super safe back then either - 2006 or so, but okay enough in the more touristy areas we walked in).

We also stopped a bit in Puerto Lopez. That area and Ayampe is a nice place to relax. Maybe you can do some surfing, or a bit of hiking, but you don't have to do much, it's just a nice quiet scenic area even if there's no huge attractions/tourist sites. Just a bit further south there's Montanita, which is a bit less quiet... it's a small beach town with a lot of nightlife and surfing.

I just returned to the US after a 30 day trip to Ecuador. I hit all the spots that you mentioned except for the Amazon. I highly recommend the Secret Garden Hostel-Cotopaxi. It is a gorgeous property. Several of the Europeans said that the Amazon was their absolute favorite part of their trip to Ecuador; spectacular in their words.
