Foil Packet Steak Fajitas
Ingredients
3 bell peppers (red, yellow & orange), thinly sliced
1 small red onion, thinly sliced
3 cloves of garlic, thinly sliced
2 tablespoons olive oil
2 tablespoons lime juice
3 teaspoons chili powder
2 teaspoons cumin
2 teaspoons smoked paprika
Salt & pepper, to taste
1 cup long-grain white rice
2 cups water
Diced avocado, for serving
Lime wedges, for serving
Fresh cilantro, to garnish

Directions
1. Preheat the grill to 425F degrees. In a large mixing bowl toss together the peppers, onion, garlic, olive oil, lime juice, chili powder, cumin, smoked paprika, salt, and pepper until well coated.
2. Place four 18 by 12-inch pieces of heavy duty aluminum foil (double if using regular foil) onto your work surface. Evenly divide the rice amongst the 4 sheets of foil, followed by the vegetable mixture, water, and the sliced steaks. Season steaks generously with salt & pepper.
3. Tightly wrap and fold the foil packet, ensuring there is enough room at the top for steam. Transfer the packets to the grill and cook for 30 to 40 minutes, until the vegetables have softened and the rice is fully cooked.
4. Transfer to a serving plate, unwrap the foil packet and garnish with diced avocado, lime wedges, and fresh cilantro. Serve with your favorite fajita toppings and enjoy!
