Ingredients:

For the Chicken Marinade:

500g chicken (boneless or with bone, cut into pieces)

1/2 cup yogurt (curd)

1 tsp ginger-garlic paste

1 tsp red chili powder

1/2 tsp turmeric powder

1/2 tsp garam masala

1 tsp lemon juice

Salt to taste

For the Gravy:

2 tbsp butter (unsalted)

2 medium onions, finely chopped

2 large tomatoes, pureed

1 tsp ginger-garlic paste

1/2 tsp turmeric powder

1 tsp red chili powder

1 tsp garam masala

1 tsp coriander powder

1/2 cup fresh cream

2 tbsp cashew paste (blend 10-12 cashews with water)

1 cup water (adjust as needed)

Salt to taste

Instructions:

1. Marinate the Chicken:

1. In a bowl, mix the chicken with yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, lemon juice, and salt.

2. Let it marinate for at least 30 minutes (or overnight in the refrigerator for better flavor).

2. Cook the Chicken:

1. Heat a pan with a little butter and cook the marinated chicken until it's 80% done. Remove and set aside.

3. Prepare the Gravy:

1. In the same pan, add 2 tbsp butter and sauté the chopped onions until golden brown.

2. Add pounded ginger-garlic and cook for a minute.

3. Stir in the tomatoes and cook until the oil separates.

4. Add turmeric powder, red chili powder, coriander powder, and garam masala. Mix well.

5. Add the cashews and cook for 2-3 minutes.

6. Blend it to a fine paste

4. Combine and Simmer:

1. Add the cooked chicken to the gravy and mix well.

2. Pour in water to adjust the consistency and let it simmer for 10 minutes on low heat.

3. Stir in fresh cream and cook for another 2-3 minutes. Adjust salt as needed.
